with fish, including cod, the white wine has always success. For
fried fish, with perfumed butter gravy or with condimented gravy,
it's recommended a white wine that handles well the oil: a
powerful dry white with good acidity.
For plates
of baked fish baked in the oven with accompaniment it is preferable
to choose a more delicate white, subtil and at the same time with a
deep full flavour, stored in tonnels , always dry and with a
moderate acidity: whites from Algarve, Lagoa, Lagos or Portimão,
Bairrada, Dão or Douro.
